The sweet potato, a carbohydrate yet deliciously good for you and kicks any other spud's butt when it comes to fiber! I love good carbs! I don't like the idea of dipping the fritters in syrup, I think they are just as delicious by themselves! I could see a dollop of lightly sweetened cinnamon creme fraiche though! I know it is not traditional to flavor a creme fraiche but come on, sometimes it is just so much fun to play around and twist things up from time to time!
SWEET POTATO FRITTERS
1 C flour
1t baking powder
1/4t salt
1/4 C milk
2 eggs, beaten
2T butter, melted
2 C shredded raw sweet potato
4 slices bacon, cooked and crumbled
vegetable oil
syrup (optional, who needs the bad carbs anyway?)
Combine flour, baking powder and salt; stir well. Add milk, eggs and butter; stir until smooth. Add sweet potato and bacon; mix well. Head 3-4 inches of oil to 375 degrees F in a Dutch oven. Carefully drop batgter by rounded teaspoonfuls into hot oil. Cook only a few at a time so that your oil temperature remains constant. Fry 2 minutes or until fritters are golden brown, turning once. Drain on paper towels. Serve warm with syrup, if desired (again, why bother with the bad carbs).
